Right now, we are all in a place none of us could have imagined a few weeks ago. I don’t know how many times I have said the word unprecedented and really meant it. Every day, so much feels uncertain and so much has changed.
As comfort food goes in Chinese culture, you can’t get much more ubiquitous than congee. Congee is a rice porridge made by slowly cooking rice in liquid. Though there are innumerable recipes for how to make it, it’s really something that can be modified any way you like once you know how to prepare it.
While I’m not getting out much these days, I did have to brave a trip to the grocery store earlier this week. Driving past the state fairgrounds, the words on the sign read, ‘Hang in there, Minnesota’. Hang in there, indeed.
