In honor of August, home to National Ice Cream Sandwich Day, we’re giving the classic a refreshing twist! This light and healthy take on the beloved dessert swaps traditional ice cream for frozen mandarin oranges.

Ingredients:

  • 1 pound fresh mandarin oranges
  • 1 package graham crackers or your favorite cookies
  • Optional: A drizzle of honey or a sprinkle of coconut flakes for garnish

Instructions:

  1. Prepare the Mandarin Orange Filling:

    • Peel the mandarin oranges and separate the segments.
    • Place the segments on a baking sheet lined with parchment paper and freeze for at least 2 hours, or until solid.
    • Transfer the frozen segments to a food processor and pulse until you reach your desired consistency. You can leave it slightly chunky for a sorbet-like texture or blend it until smooth for a creamier ice cream-like consistency.
  2. Assemble the Ice Cream Sandwich:

    • Spread a generous amount of the frozen mandarin orange mixture onto one side of a graham cracker or cookie.
    • Top with another cracker or cookie, pressing gently to seal.
  3. Serve:

    • Enjoy immediately for a soft-serve texture or freeze for a firmer treat.
    • For an extra touch, drizzle with honey or sprinkle with coconut flakes before serving.
