This salad is packed with nutty wheatberries, juicy tomatoes, and a zesty salted lime dressing. It’s easy to make and can be prepared ahead of time.

Ingredients:
For the Wheatberry Salad:
- 1 cup uncooked whole wheatberries
- 3 cups water or vegetable broth
- 1 pint (about 2 cups) cherry or grape tomatoes, halved
- 1/2 red onion, thinly sliced or finely diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper to taste
- Sea Salt to finish
For the Lime Vinaigrette:
- juice and zest from 1 lime
- 1/4 cup apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon ground cumin
- Pinch of red pepper flakes
- 1/4 cup extra virgin olive oil
- salt and freshly ground black pepper to taste
Instructions:
1. Cook the Wheatberries: Rinse the wheatberries thoroughly under cold water. In a medium saucepan, combine the rinsed wheatberries and 3 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the wheatberries are tender but still have a slight chew. Drain any excess liquid and spread the cooked wheatberries on a baking sheet or large plate to cool completely.
3. Make the Vinaigrette: In a small bowl, whisk all ingredients except for the olive oil. Drizzle in the olive oil while whisking and continue to whisk until emulsified. Season with salt and freshly ground black pepper to taste going light on salt since you will be adding sea salt later.
4. Assemble the Salad: Once the wheatberries are cooled, transfer them to a large mixing bowl. Add the halved tomatoes, sliced red onion, chopped cilantro, and chopped parsley. Pour the lime vinaigrette over and toss gently to combine everything, ensuring the wheatberries and vegetables are evenly coated with the dressing.
5. Chill and Serve: Add sea salt to taste and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
