Banana Oat Greek Yogurt Muffins

It’s baking season!  This healthy muffin recipe, made with plain Greek yogurt, is packed with protein. I suggest adding a few nuts or seeds for an extra boost. Feeling adventurous? Swap out the banana for pumpkin and add chocolate chips!

Ingredients

  • 1 cup plain Greek yogurt
  • 2 medium ripe bananas (1 cup mashed)
  • 2 large eggs
  • 2 cups rolled oats (old fashioned or quick)
  • 1/8 cup raw honey
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • OPTIONAL: Add up to 1/2 cup of chopped nuts, seeds, or chocolate chips

Instructions

*Preheat oven to 400°. Grease or line a muffin tin.

*Add all the ingredients except for the optional add-ins to a blender or food processor and process on high until the oats are broken down and batter is smooth and creamy. If using any of the optional add-ins, fold them in after by hand.

*Pour batter into prepared muffin pan, filling each 3/4 full.

*Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for about 10 minutes before removing. Store in an airtight container for up to a week.
